Caribbean Shrimp & Rice Bowl
This colorful and flavorful rice bowl is inspired by the vibrant cuisine of the Caribbean. With juicy shrimp, sweet pineapple, and spicy jalapeño, this dish is a perfect balance of sweet, savory, and heat. Serve with a squeeze of lime and a sprinkle of fresh cilantro for a burst of fresh flavor.
In a medium saucepan, combine the rice and water and bring to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
While the rice is cooking, heat the olive oil in a large skillet over medium-high heat.
Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
Add the onion, garlic, jalapeño, and red bell pepper to the skillet and sauté for 5-7 minutes, or until the vegetables are tender.
Add the cumin, smoked paprika, thyme, salt, and black pepper to the skillet and stir to combine with the vegetables.
Add the pineapple chunks to the skillet and cook for 2-3 minutes, or until the pineapple is lightly caramelized.
To assemble the rice bowls, divide the cooked rice between four bowls.
Top each bowl with the shrimp and the vegetable mixture.
Garnish with lime wedges and chopped cilantro.
