Chocolate Covered Strawberry Cheesecake
This chocolate-covered strawberry cheesecake is a decadent and indulgent treat that is perfect for Valentine's Day. Preheat the oven to 325°F (165°C).
In a medium bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Press the mixture into the bottom of a 9-inch (23cm) springform pan.
In a large bowl, beat the cream cheese until smooth. Add 1 cup of sugar and vanilla extract and beat until well combined. Add the eggs, one at a time, beating after each addition.
Fold in the diced strawberries. Pour the cheesecake mixture over the prepared crust.
Bake for 50-60 minutes, or until the cheesecake is set but still slightly jiggly in the center. Turn off the oven and leave the cheesecake in the oven for an additional 10 minutes. Remove from the oven and cool to room temperature.
In a small saucepan, heat the chocolate chips and heavy cream over medium heat, stirring constantly, until the chocolate is melted and the mixture is smooth. Pour the chocolate ganache over the cooled cheesecake and refrigerate for at least 2 hours before serving.
