Classic Beef Bourguignon
This slow cooker beef bourguignon is a classic French dish that is hearty and comforting, making it a perfect option for a cold winter evening. It's made with tender beef, red wine, and vegetables and is slow cooked to perfection in a slow cooker.
In a large bowl, toss the beef with the flour, salt, and pepper until the beef is evenly coated.
Heat the oil in a large skillet over medium-high heat. Add the beef in batches and cook until browned on all sides, about 5 minutes per batch. Transfer the beef to a slow cooker.
Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes. Pour in the wine and scrape up any browned bits from the bottom of the pan. Bring the mixture to a boil and cook for 2 minutes. Pour the mixture over the beef in the slow cooker.
Add the beef broth, tomato paste, thyme, and bay leaves to the slow cooker and stir to combine. Add the carrots, potatoes, and pearl onions and stir to combine.
Cover the slow cooker and cook on low for 8 hours, or until the beef is tender.
Remove the bay leaves and serve the beef bourguignon hot with the vegetables and broth.
