Comforting Winter Beef Stew
This hearty stew is perfect for a cold winter day. It's filled with tender chunks of beef, carrots, potatoes, and green beans, all simmered in a rich broth made with red wine and beef stock. Serve it with a loaf of crusty bread for dipping and you have a comforting meal that will warm you from the inside out.
In a large pot or Dutch oven, heat the oil over medium heat. Add the beef and cook until browned on all sides, about 5-7 minutes.
Add the onion and garlic and cook for an additional 2-3 minutes, until the onion is translucent.
Stir in the beef stock, red wine, tomato paste, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour.
Add the water, carrots, potatoes, and green beans to the pot. Simmer for an additional 1 1/2 hours, or until the beef and vegetables are tender.
Serve the stew hot, with a loaf of crusty bread on the side for dipping.
