Mexican-Style Grilled Cheese

A spicy, smoky, and melty take on classic grilled cheese, filled with tangy BBQ onions, smokey gouda, and fresh cilantro, all sandwiched between crispy grilled flour tortillas.

  1. Preheat a grill to medium-low heat.

  2. Heat 3 tbsp olive oil in a large non-stick skillet. Add sliced onions and sauté for about 5 minutes, until almost soft.

  3. Add 1/2 cup barbecue sauce and 2 tbsp water to the skillet, stirring until onions are evenly coated (around 2 mins).

  4. Turn off the heat, and add hot sauce to taste.

  5. Spread a thin layer of BBQ onions on one side of each slice of bread. Top with grated smoked Gouda and cilantro, and then place together.

  6. Place the bread on the grill, cooking until toasted and cheese is melted (around 2 mins per side).

  7. Cut the sandwich into half and serve with sour cream and salsa, if desired.
