Spanish Tortilla de Patatas
This Spanish potato omelet is a classic dish that is perfect for breakfast, lunch, or dinner. The combination of potatoes and eggs makes for a satisfying and filling meal.
Heat olive oil in a large nonstick skillet over medium heat. Add onion and potatoes and cook until the potatoes are tender, about 10 minutes.
Pour beaten eggs over the potato mixture. Stir gently to combine.
Reduce heat to medium-low and cook until the eggs are set, about 10 minutes. Flip the tortilla and cook for an additional 5 minutes, or until the other side is golden brown.
Season with salt and pepper to taste. Serve warm or at room temperature.
