Spicy Tex-Mex Chicken Strips with Avocado Lime Dip

Preheat oven to 400°F.

In a shallow dish, combine the flour, paprika, chili powder, garlic powder, onion powder, cumin, salt, and cayenne pepper.

In another shallow dish, beat the eggs.

In a third shallow dish, place the panko breadcrumbs.

Dip each chicken strip into the flour mixture, then the egg mixture, and finally coat with the panko breadcrumbs.

Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken strips and cook for 3-4 minutes per side, or until golden brown and cooked through.
