Spicy Tex-Mex Chicken Strips with Avocado Lime Dip
These chicken strips are coated in a crispy, spicy breading and served with a creamy avocado-lime dip. Perfect for a game day snack or a weeknight dinner, these strips are sure to please any Tex-Mex fan.
Avocado Lime Dip
Preheat oven to 400°F.
In a shallow dish, combine the flour, paprika, chili powder, garlic powder, onion powder, cumin, salt, and cayenne pepper.
In another shallow dish, beat the eggs.
In a third shallow dish, place the panko breadcrumbs.
Dip each chicken strip into the flour mixture, then the egg mixture, and finally coat with the panko breadcrumbs.
Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken strips and cook for 3-4 minutes per side, or until golden brown and cooked through.
Transfer the chicken strips to a baking sheet and bake for an additional 5-7 minutes, or until crispy and fully cooked.
While the chicken strips are baking, prepare the avocado lime dip. In a small bowl, mash the avocado with a fork until smooth. Stir in the Greek yogurt, lime juice, salt, black pepper, and garlic powder.
Serve the chicken strips with the avocado lime dip.
