Strawberry Cheesecake Bars
These strawberry cheesecake bars are the perfect dessert for any occasion. The creamy cheesecake filling is studded with fresh strawberries and sits atop a buttery graham cracker crust. They're easy to make and will definitely satisfy your sweet tooth. Serve them with a dollop of whipped cream and a sprinkle of chopped strawberries for a beautiful and delicious treat.
Preheat the oven to 350°F (180°C). Line a 9x13-inch baking dish with parchment paper.
In a small bowl, mix together the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared baking dish to form the crust.
In a separate bowl, beat the cream cheese and sugar together until smooth. Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and diced strawberries.
Pour the cheesecake filling over the graham cracker crust and smooth the top. Bake for 45 minutes, or until the cheesecake is set and the edges are lightly golden. Let the cheesecake bars cool completely before cutting into squares and serving.
