Tangy Lemon Bars
These tangy and sweet lemon bars are the perfect dessert for any occasion. They're made with a buttery shortbread crust and a tangy lemon filling, and they're topped with a dusting of powdered sugar. The bars are super easy to make and are sure to be a hit with lemon lovers everywhere.
Preheat the oven to 350°F (180°C). Grease an 8x8 inch square baking pan.
In a large mixing bowl, combine the flour, powdered sugar and salt.
Using a pastry cutter or your fingers, cut in the butter until the mixture resembles coarse crumbs.
Press the mixture into the prepared pan, and press it firmly into the bottom and up the sides of the pan.
Bake the crust for 15-20 minutes, or until lightly golden brown.
Remove from the oven and let it cool for about 10 minutes.
In a separate mixing bowl, whisk together the granulated sugar, eggs, flour, lemon zest, and lemon juice. Pour the mixture over the cooled crust.
Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set.
Let the lemon bars cool completely before cutting them into squares. Dust with powdered sugar before serving.
